The short of it.

Hungary Louis is a place to share our home’s many creative explorations.

Who is writing, photographing, baking, knitting, making?

Hailey is the hungry face behind Hungary Louis. Educated as an architect at both CalPoly SLO and SCIarc, Hailey has always had a passion for making in its many creative forms. The root of most creative endeavors is her interest in design, and its ability to stir the senses. Hailey finds joy in sharing the fruits of her labor with friends and family.  Sharing her creations brings richness to her world. She hopes that in sharing her many trials and errors through this website she will learn though feedback and comments.

Food Making

Hailey has a passion for food, and cooking. From the age of eight she has been an almost vegetarian, eating the occasional turkey or chicken but focusing her cooking and eating on vegetables and fish. In early 2012 Hailey decided to make the transition to a plant based diet. Since becoming Vegan Hailey has been exploring new recipes and ingredients and sharing the process while doing so.

Why did Hailey become Vegan? There are so many different reasons ranging from health to animal rights to environmental impact. Hailey just couldn’t continue eating anything she wasn’t willing to harvest herself. She would never kill and animal, so she could no longer eat one. She also would never want to milk a cow, and now having nursed two children,  wouldn’t want to be in a perpetual state of pregnancy and lactation so she just couldn’t participate in consuming dairy anymore. Mostly she feels so much lighter eating this way. Her foot print is small, her conscious clear, and her body running better than it ever has.

Does Hailey think everyone should be Vegan? No! Hailey loves meat eaters. You have to do what is right for you.

Cooking allows Hailey to keep her mind focused and sharp on a single task while remaining freely creative. It is a way to connect with family and friends, and to share stories and experiences through food. What Hailey cooks is often a reflection of her mood, and always done with intention and purpose.

In its precision, baking is a craft that Hailey has always been passionate about. The process of gathering, measuring, and combining ingredients. Exploring texture, color, smell and taste while learning with each attempt. Sharing the product afterward, and building community in doing so. Baking and cooking deeply saturate Hailey’s thoughts and bloodstream.

Knitting and Sewing

This has always been an interest of Hailey’s. As a little girl watching her Bubie Yetta click her sticks together, she knew she wanted to learn. Hailey found knitting is an amazing art, not that dissimilar to architecture in its desire to create a three dimensional object out of a very linear framework. The more Through knitting and purling Hailey was able to find a deep peace and inner quiet that no other activity had provided. The meditative calm, and challenge of each project created heirloom pieces that will be with her family for generations. Hailey learned how to sew in 2010. This has been a wonderful compliment to her other creative interests, and continues to challenge her interest in three dimensional construction.

Making

Hailey often finds herself making things she can not find to purchase. She often desires objects that must be made because her vision or desire is one that is custom and specific. These one of a kind pieces have special meaning to her and her family. They range in their size, material, and form, but typically incorporate her love for graphics, texture, color, and typography. Hailey’s roots as an architect allow her to design objects with a strong three dimensional perspective. Most explorations are inspired from her love for space making.

Why ‘Hungary Louis’?

Louis Friedman was Hailey’s grandfather and one of her main creative inspirations. Louis grew up in ‘Hungary‘ and fought in a resistance movement during WWII. After managing to escape to Toronto with his bride Magda, Louis opened ‘Open Window Bakery’. It was and is to this day one of Toronto’s most famous Jewish bakeries. He moved on to open other bakeries which equally as loved. Growing up Louis let Hailey and her brother use the kitchen’s of his bakeries as playgrounds teaching them to braid Challah, cut cookies, twist bagels, and frost cakes. Many of Hailey’s fondest childhood memories took place in these bakeries, sitting around family tables, sharing with one and other. She always felt a deep sense of pride in her grandfather and the stores he had poured his heart into.

The Guinea Pigs

Hailey is surrounded by a community of very supportive and loving taste testers.

The hubby :: David. His favorite meal is steak et frites (which Hailey doesn’t cook him due to her pseudo vegetarianism).

The son :: Isaac. His favorite meal is macaroni and cheese, broccoli, milk, & DESSERT.

The daughter :: Coco. Her favorite meal is her only meal. Milk.

The Photography.

All photography on hungarylouis.com is taken by Hailey unless credited otherwise. Hailey has a deep interest in photography, and loves her two mini subjects Isaac & Coco. Food photography is new to Hailey, but she is enjoying learning as she cooks.

    Hailey, you continue to impress and inspire me as you have done since meeting you 2 years ago. First as a new mother, and now this new venture of yours. You have a knack for making things look effortless. I am in awe of you. i wish you continued success with this new project and will be happy to be a guinea pig for any recipe you make!

    Synthia- Thank you so much! It has been such a fun process and very much defines who I am as a person vs. a mother. It has been fun to involve the kiddies, and so looking forward to whats to come!
